Description
Pilar Pla Pechovierto currently owns El Maestro Sierra. She is assisted by Ana Cabestrero and Juan Clavijo who is the cellar master and Doña Pilar, a widow whose husband was a direct descendent of the family that founded the Bodega. She has respected her husband’s wish that the winery remain in operation. The soleras at El Maestro Sierra are easily over 60 years old and some may be close to 100 years old. By anyone’s standard in Jerez, they are the crown jewel of Sherry. Traditional Brandy of Jerez is aged similarly to Sherry: in a solera where bottles are pulled from the oldest casks and refilled from progressively younger ones. The El Maestro Sierra Brandy Reserva is aged a minimum of 20 years in old Oloroso casks and bottled without filtration. Dense and complex aromas of wood and tobacco very clearly show its age. The palate is rich and smooth with a very persistent finish.
