  • From the late Dave Pickerell, HIllrock produces the very first solera-aged bourbon. Solera aging is a process that has traditionally been found in the world of sherry and port, but now we can see this process in two unexpected areas, whiskey aging, and New York state. Generally, the whiskey from the oldest cask is removed, then that cask is refilled from the younger ones, creating a blend over time. The cascading effect continues until the youngest cask in the solera is filled with new make. As a result, no cask in the solera is ever completely empty. Hillrock Solera whiskey marries Hillrock Estate produced bourbon with a mature “seed” bourbon that Pickerell carefully sourced. After aging in the solera, the bourbon is finished in 20-year-old ex-Oloroso Sherry casks. The current age of Hillrock Solera Aged Bourbon is over six years and the rye content is approximately 37%, and gradually changing.
