  • Baltimore Spirits Co is making some wildly creative products, but their Oaxacan inspired apple brandies are showstopping. Kindled by their appreciation for mezcal and its particular methods of production, the distillers sought to make a local product in the same style, but using Maryland apples. The juice is pressed by the orchard, and the cores and skins are then smoked for eight hours before being returned to the juice. Here they begin an epic, ten day long wild fermentation. The brandy is then distilled in copper pot stills and proofed to 50% abv using the tails, a technique commonly used in mezcal production. The smoke is balanced, allowing the fruit to shine through, especially on the nose. Use in cocktails as you might use a mezcal.
