Description
  • Chacolo Brocha; a unique mezcal from Zapotitlan de Vadillo, Jalisco. It is distilled by 5th generation master distiller, Macario Partida Ramos, who is now joined by his son Miguel, representing the 6th generation of mezcal distillation in the Partida family.

    Using a subspecies of Agave Angustifolia called Brocha, the Partida family allows the agave to ripen for seven years, three of which are capon: A process where the quiote (reproductive stalk) is cut down, allowing the agave's sugars to concentrate back into the plant's heart. 

    The agaves are cooked in an earthen pit using a combination of mesquite and guamuchil wood, then milled by hand using axes. A long, cool fermentation takes place over the course of 26 days in volcanic rock wells. The distillation is then carried out on a Filipino-style still built from a combination of copper and the hollowed trunk of a Parota tree. 

    Look for flavors of yerba buena, coriander seed, wet stone, ginger, and pear.
