Description
  • From on the Island of Mull, this Tobermory is a 9-year and finished by Independent Bottler Duncan Taylor in an Octave cask. An Octave cask is a cask that is approximately 1/8th the size of a 500-liter sherry wine cask, called a butt. Traditionally made from Spanish, sometimes American Oak. The staves from the butt are reconstructed to make a smaller cask, allowing for more interaction between the wood and the spirit, developing a greater depth of flavor in a short time period. In our whisky, it spent the final three months in the Octave cask.

Look for fresh barley grains, sweet crème brûlée lemon cream pie, macadamia, fruit tree blossom, white pepper, seashell calcium salt on the nose. The palate has sweet BBQ charcoal smoke, lemon peel, mandarin, black pepper, dark cherry pie, seashell brine, tobacco, brown sugar, white raisins, clay, milk chocolate.
